Twice Bake Potatoes

Dinner for 2 people :)

4 russet potatoes
1 cup milk
1 tablespoon butter
Kosher salt and black pepper
Olive oil
2 cloves or garlic
1 white onion
1/2 lb kielbasa
Broccoli
Sharp cheddar

Heat the oven to 400 decrees. Wash the potatoes, and dry. But them in the oven for 45-55 minutes. Heat up a pot, medium-high. Add olive oil onto the pot. Cut then onion small and add into the pot. Cook until slightly brown, 4 to 5 minutes. Cut the kielbasa and add into the pot. Let the kielbasa cut nice and crispy on each side. Add garlic. Cut the broccoli and add it into the pot, but a cover on it and turn off the heat.


Use a fork to pock a potato. If they are nice and crisp out side and easy to cut into inside, then take them out of the oven. Let them sit for about 2 minutes, then slice them in half. Take a spoon and scoop the potatoes and drop them into the pot with the other ingredients. Keep the potato skin ready to be filled. Warm the butter and milk in a small bowl in the microwave for about 15 seconds. Add that to the pot and mush/stead everything together. It should be like smashed potatoes mixed with kielbasa and broccoli. Add salt and pepper. Scoop each handful onto the skin if the potatoes. But cheese on the top of each. But the potatoes back in the oven and turn on the broil until even more crispy!
