Chicken Pot Pie

 Ingredients:
9'' pie crust (from scratch or frozen)
1/3 cup unsalted butter
1/3 cup flour
1/3 cut chopped onion
salt and pepper
1 1/2 chicken broth
1 pealed, cooked, shopped potato
1 cup chopped carrot
1 cup frozen pea's
2 cups cooked chicken

Heat the oven 435 d


(If you are making pie crust:

1 1/4 cup all-purpose flour
1/4 tsp salt
1/2 cup cold unsalted butter, cut into cubes
3 tbsp ice water

In a large bowl, stir together the flour and salt. Use two silverware knives cut the butter into the flour mixture until the texture is a thick meal batter and  the size of small peas. Add the cold water and mix with the fork until the dough pulls together. If the dough is dry mix in more cold water. Using a rolling pin, roll the dough flat. Mold the dough into a ball and let it chill in the fridge. )

1. Get a large pan and heat medium high, add the butter, and once its melted add the onion. 

Stir and cook for 3 minutes


Perfectly thick butter, onion, flour, milk, and broth


2. Add the flour. Whisk the flour and let it simmer for 1 minute. Slowly add broth while stirring. Add the milk, salt, and pepper. Let it simmer again for 2 minutes. If it gets dry, add more milk.









3. Turn the heat off. Add the frozen peas, the chopped carrot, the cooked chopped potato, and the chicken.






4. Using a 8'' pie pan, add all of the combined ingredients. Take the pie out and roll it equally thin and cover the pie pan with the dough. Make a cut in the dough and bake for 30-35 minutes. Let it sit for 20 minutes and then enjoy!
