Sausage and Polenta Soup

Olive oil
5 Italian sausage-taken out of the casing
4 carrots- cut small
2 onions- cut small. One white and one purple
3 garlic
Salt and pepper
Cayenne
Oregano
1 bay leaf
Coriander
Fresh rosemary
1/2 cup brown sugar
1 1/2 cups tomato (sliced and juice)
2 QT chicken broth
1 cup water
1 big potato (leave skin,cut small)
-polenta-
Sliced round and thin(2 for each person)
Butter
Olive oil
Salt ad pepper
Cilantro

Get a big pot, put some olive oil, and heat it on medium high. Get sausages out of the casings and have quite a few in small amounts. Put half of the sausages Into the pan, let it get nice and brown. Then take the first half out, do the other half, but it all in a bowl and but it to the side.

Put the carrels, onions, and garlic into the pot. Add the salt, pepper, all the other spices and the bay. Cook for 5-7 minuets. Add the brown sugar and the tomatoes. Add the broth and water. Let the pot get hot, add the potato, then low the heat, put a lid on it, and let cook as long as you can (I did 2-3 hours).

Put the sausages into the pot. Get a pan, put it on medium heat, put a quarter of butter into the pan. Make sure the salt and spices are right. Slice the polenta, add olive oil on each, add salt and pepper. Make sure the pan is hot enough and the butter should be brown. Fry each side of the polenta.

Get each bowl, add a nice amount of soup, but 2 or the polenta's on the top and them a speck or cilantro...and eat!
