Creamy Spinach and Mushroom Chicken

Ingredients:
Creamy Spinach Sauce
1 shallot
2 tbs olive oil
3 garlic cloves
1 cup cream cheese
4 cups fresh, washed, spinach
salt and pepper
(the Creamy Spinach can be prepped a few hours in advance, and stored in the refrigerator)
Other items
1 tsp butter
olive oil
salt and pepper
1 1/2 cups sliced mushrooms (any kind, but fresh)
1 cup italian bread crumbs
1 egg
1 1/2 pounds boneless, skinless thigh chicken
Pre-heat oven 375 degrees.
To make the Creamy Spinach sauce, heat a sauce pan to medium-high. Add the olive oil, let it warm up while you thin chop the shallots. Add the shallots, cook for 2-3 minutes. Smash and add all 3 of the garlic cloves, and add the spinach. After about 3-4 minutes the spinach will wilt more than 50% or the size. Reduce the heat and add the 1 cup of cream cheese, salt, and pepper. Once the cream cheese is liquid like, turn the heat off and put the creamy spinach sauce on the side.
Get a skillet, and heat medium-high. Add the 1 tbs butter and a bit of olive oil. Once the butter and olive oil are bubbling, add all of the sliced mushrooms. Stir occasionally. While you have a few minutes, take the chicken out of the fridge. Get a long, semi-deep bowl. Beat the 1 egg onto the bowl and add the chicken. Get the chicken soaked, add salt, pepper, and cover the chicken in italian bread crumbs. Once the mushrooms are wilted and darker colored, pour them into a bowl and but them aside.
(***FYI...I love flavor and I am lazy with dishes SO I decided to use the same skillet that was still warm and full of mushroom and butter flavor. Up to you.***)
With the now hot skillet, add one side of each chicken and sear each side. Use a nice size pyrex pan, and add the chicken into the pan.
Put the chicken into the oven. Cook for about 15 minutes, CHECK THE TEMP of the chicken after 15 minutes. It should be 160 degrees. Turn the oven off, put the mushrooms on top of the chicken, cover it with the Creamy Spinach Sauce and serve! I made a quick cucumber salad and smashed potatoes on the side! I think this dinner could be for 4 people. It was quick and easy especially with already sliced mushrooms, italian bread crimps, and making the sauce in advance.
